“This is one of my favorite dishes in Vietnam. It was love at first bite – an explosion of contrasting textures, temperatures, colours and flavours. The fresh herbs, hot beef, room temperature noodles brought together by a haunting sweet and sour beef broth brings this highly complex dish to one of the greatest dishes of all time. That’s why this establishment only makes one dish, and they do it very well. Ignore the large bowl of sliced beef when entering (hygiene is not their strong point) but you’ll see that it will be cooked at very high heat for a significant amount of time to kill bacteria, so it is not worth worrying about.” – Bobby Chinn
